Gur, also known as jaggery, is an unrefined sweetener made from concentrated sugarcane juice that retains more natural minerals such as iron than refined white sugar. It has a warm, caramel-like flavour that works well in South Asian sweets, chai, porridge and savoury-sweet dishes. It has been used in traditional cooking across the region for centuries.
